Put salad on a stick and make it into cocktail party fare!  That’s what I did with these Caprese salad-inspired skewers. Grape tomatoes, mini mozzarella balls and fresh basil are the components of a traditional Caprese salad. Skewer them on cocktail picks and you have yourself a delicious appetizer that takes very little time to prepare. Using store-bought marinated mozzarella balls, often called bocconcini, makes this dish super quick. Add an unexpected, stylish twist to these Caprese salad skewers by using yellow, golden or an heirloom tomato variety in place of traditional red tomatoes.

Serve Caprese salad skewers for the wine and cheese tasting menu featured on Stylish Spoon, or as part of any cocktail party menu. Caprese salad skewers are especially great during the late summer and early fall, when tomatoes are at their peak, and go with almost any summer or Italian menu.

Caprese Salad Skewers

Ingredients

  • 1 pint grape tomatoes
  • (2) 16 oz. container marinated mini mozzarella balls (bocconcini)
  • 24 fresh basil leaves
  • 8" bamboo skweres
  • Slice tomatoes in half vertically. Skewer half of tomato through stem side on skewer. Next add 1 mini mozzarella ball, then 1 basil leaf to skewer. Finish with remaining tomato half with flesh side pointing towards the mozzarella to create a sandwiched effect with the filling and the tomato halves. Repeat with remaining ingredients.
